If we travel by this route on 27th December - will the road be acessble / safe. What will the snow conditions be?

If you are hiring a car make sure you are covered for travel out side of Spain.
You may need chains if the weather has been bad and I have heard that the police check and turn you back it you don%26#39;t. You might be able to hire these with the car for about 30€, but as Zaragosa is a long way from the mountains they may not have any and you will have to buy some on your travels.

In theory the Col de Somport is never closed, unlike many Alpine passes. In practice you could easily be driving in heavy snow even if the road is continually cleared. IIRC the Somport is around 1700 metres. You certainly want to have chains if only %26quot;for the just-in-case part in the fine print%26quot; as SWMBO would say.
And then it will be mild and sunny and you%26#39;ll wonder what all the fuss was about...
